Preparing Instructions for Minestrone Soup

  1. Peel, wash and cut the carrot, potato and zucchini into half-inch sized cubes. Peel, wash and chop the garlic and onion. Wash the green peas with water.
  2. Wash and cut the celery and leek into half-inch sized pieces. String, wash and cut the French beans into half-inch sized pieces. Wash and roughly chop only half of the basil leaves.
  3. Give a superficial cross-cut with a sharp knife on top of the tomatoes. Blanch the tomatoes in sufficient quanity of water in a deep microware bowl for 2 minutes in Microwave Oven at HIGH (100%) and transfer them immediately into a bowl of cold water. Peel the skin off, cut them into half and remove seeds. Cut the pieces further into half-inch sized pieces.
  4. In a large Microwave Oven’s casserole (an ovenproof baking dish, typically with a cover), heat the oil (preferably, olive oil should be used) for three minutes in Microwave Oven at MEDIUM (70%). Remove the casserole and add garlic, onion, carrot, leek and celery to it and cook for 6 minutes in Microwave Oven at HIGH (100%) with occasional stirring.
  5. Add French beans, zucchini, potato, green peas, tomato puree and tomatoes. Add remaining half of the fresh basil leaves (roughly broken by hand), vegetable stock and cook for 8 minutes in Microwave Oven at HIGH (100%). Add the macaroni, salt (as per required taste) and white pepper powder. Cover the bowl and cook in Microwave Oven at HIGH (100%) for 5 minutes.
  6. Garnish the dish with fresh basil strips and grated parmesan cheese. Serve it piping hot.

Tip: Spring onions can be used in place of leek.
